Though it didn't originate here in Florida, it was a popular edible on most Florida Cracker homesteads. Plant grows to around 8 feet in height and produces pale-yellow flowers with a dark center that bloom from September to November. Many parts of the plant are edible, including the seeds, leaves, fruits, and roots, and have a flavor similar to sorrel or rhubarb. The most popular part of the plant, however, is the calyx, a fleshy, cup-like structure that contains the plant's seeds. It's bright-red color and tart taste make a good replacement for cranberries and are often used for making jams, sauces, herbal teas, and other drinks. For warmer climates, direct sow once the soil has warmed to between 75 to 85 degrees F. For cooler climates, start indoors 5 to 8 weeks before the last spring frost. Plant seeds 1/2 inch deep and about 3 feet apart. Keep soil lightly moist until germination, which should occur with 7 to 14 days.
