The Okinawan Sweet Potato is named after the islands once referred to as the of the Land of Immortals - Okinawa. Okinawans are renowned for their longevity and low rate of diseases . The Blue Zone attributes this to their moai (social network), their strong ikigai ( sense of purpose in life) and their lifelong healthy, plant based diet. Their starch of choice is the Okinawan sweet potato instead of rice that is so popular in the rest of Japan. This sweet potato, also called Hawaiian Sweet Potato or Beni Imo, develops a smooth creamy texture when it is wrapped, and baked @400 degrees for 60 to 90 minutes.
