IThe sprouting process removes some of the naturally occurring tannins which can sometimes impart an astringent taste while releasing the multitude of enzymes and improving mineral absorption.Sprouted walnuts are packed with nutrients and easy to digest. My sprouting process involves soaking the walnuts for 4 hours causing them to begin to germinate. The walnuts are then rinsed with filtered water and allowed to soak an additional 4 hours. The walnuts are rinsed a second time with filtered water, removed from the solution and slowly dried at a very low temperature with low humidity for up to 36 hours.
